The present invention relates to a method for roasting lotus seeds for coffee-flavored beverage production, the method comprising the steps of: (A) selecting and washing lotus seeds; (B) extracting and removing the core of the selected lotus seeds, thereby isolating through-hole lotus seeds; (C) placing the through-hole lotus seeds in a dryer and hot air drying same for 2-3 hours; and (D) introducing the dried lotus seeds into a roasting device and roasting same. According to embodiments of the present invention, it is possible to produce a beverage that mimics the taste and aroma of coffee, yet contains no caffeine by optimally setting the process of roasting and brewing lotus seeds. Moreover, the beverage retains the unique savory taste of lotus seeds and medicinal benefits.
