Objective To investigate the scavenging activity of theophylline and structurally similar alkaloids against acrolein (ACR) in simulated processing systems, and investigate the effects of 12 kinds of common polyphenols combined with theophylline on their activity. Methods The scavenging activities of theophylline and alkaloids with similar structure on ACR in the simulated processing system were analyzed by high performance liquid chromatography, and the content of theophylline and ACR adduct (TP-ACR) in the reaction system after the combination of 12 kinds of polyphenols and theophylline were analyzed under simulated physiological conditions. In addition, with epigallocatechin gallate (EGCG) as the representative, theophylline and EGCG were combined at a ratio of 1:50 according to Chou-Talalay rule, and the combination index was calculated to analyze the effects of the combined components.
