Problem to be solved: To provide a method for producing instant noodles capable of being impregnated with the noodles or shortening the boiling time, and capable of being quickly eaten. Solution: A noodle base is mixed with a proper amount of water and salt, and the mixture is extruded to make the noodles of different shapes such as a long and narrow shape, a thick and flat shape, a spiral shape or a sheet shape. Then, the formed noodles are subjected to steam heating, then to quantitative cutting, and then to semi-expansion drying or full-expansion drying based on the thickness of the noodles or the set impregnation and boiling time.
