[Problem] to provide a method for producing an emulsion containing fish oil and hardly causing phase separation even after passage of time. [Solution] a method for producing an emulsion includes a step of mixing fish oil (a), lecithin (B), and water (C) to obtain an emulsion. The emulsion obtained by the production method hardly causes phase separation even after the passage of time, and can be suitably used as a content for a soft capsule by adding a thickener (D).
