[Problem] to produce a functional sesame protein composition from a defatted cake of roast sesame. [Solution] a method for producing a sesame protein composition comprising increasing a biologically active substance contained in a product comprises the steps of: (1) using defatted Lees of roasted sesame as a raw material; (2) extracting the raw material with an aqueous alkaline solution having a pH of 9 or more; (3) adding an acid to an alkaline extract obtained by separating residues from an alkaline extract mixture to lower the pH, (3) precipitating the protein in the form of a product; and (4) recovering the precipitated protein as a product.
