To provide a bilberry fruit extract containing a reduced amount of organic acid and an extraction method therefor.SOLUTION: An extraction method for bilberry extract includes: squeezing a bilberry fruit to obtain a fruit with a reduced water content; and acid-treating the fruit with the reduced water content to obtain bilberry extract as a water-soluble fraction.SELECTED DRAWING: Figure 2
