The purpose of the present invention is to provide a water-soluble konjac corm extract by an easier method. Separating and removing a fatty acid ester and a plant sterol from a konjac corm extract that has been extracted using an organic solvent makes it possible to provide a water-soluble konjac corm extract in which fatty acid ester content is 500 mg/100 g or less, plant sterol content is 5,000 mg/100 g or less, glucosylceramide content is 5,000 mg/100 g or more, and which contains a steryl glucoside.
