To provide a manufacturing method of a rice bran lactic acid bacteria fermented product containing much extracellular polysaccharide having a health function derived from lactic acid bacteria, and excellent in flavor and texture obtained by using rice bran which can be taken by a person with lactose intolerance or milk allergies.SOLUTION: A rice bran saccharified product obtained by subjecting a raw material which is rice bran to a saccharification treatment with rice malt, is fermented by using lactic acid bacteria generating extracellular polysaccharide, thus, much extracellular polysaccharide is contained, and unpleasant odor and unpleasant taste peculiar to rice bran can be improved, and further, a useful nutrient derived from rice bran can be taken.SELECTED DRAWING: None
