The present invention finds application in the industrial production of products that include extracts from winemaking by-products which are rich in platelet aggregation inhibitors including the aggregation factor PAF (Platelet Activating Factor) exhibiting anti-atherogenic effect. This invention provides improved conditions for the industrial extraction of winemaking by-products, the distribution in the various winemaking by-products of the inhibitors that affect the action of PAF and other accumulative factors. In addition, it provides improved conditions for the industrial extraction of winemaking by-products, the distribution in the various winemaking by-products of the PAF metabolism modifiers, i.e. compounds that affect the activity of PAF biosynthesis enzymes. Finally, it provides the method of calculating the biological activity of winemaking by-products in a unit corresponding to grams (g) according to the IC50 values??determined in said patent.
