To provide a vacuum cooling device capable of cooling food quickly and reliably while preventing the food from freezing.SOLUTION: A vacuum cooling device includes a processing tank 2 in which food F is accommodated, decompression means 3 in the processing tank 2, pressure-restoring means 4 in the processing tank 2, a pressure sensor 31 for detecting a pressure in the processing tank 2, an object temperature sensor 32 for detecting temperature of the food F accommodated in the processing tank 2, and control means for controlling the means 3 and 4. When the detection pressure of the pressure sensor 31 becomes equal to or lower a freezing prevention pressure as freezing prevention control while the processing tank 2 is decompressed by the decompression means 3, the pressure in the processing tank 2 is restored by a preset recovery pressure or a preset recovery time.SELECTED DRAWING: Figure 1
