To provide an after-processing method for harvested avocados, the method improving yield in avocado afterripening processing.SOLUTION: An after-processing method for harvested avocados comprises: harvesting, cleaning, and selecting avocados grown to a predetermined size at a farm; transporting the selected avocados from the farm to a processing plant; subjecting the transported avocados to afterripening; and supplying the avocados to consumers. In this form of avocado dealing, a stem preventing treatment is performed prior to the avocado afterripening, the stem preventing treatment characterized in that a top core part of avocado is coated with a coating film of thickened polysaccharide, etc.SELECTED DRAWING: Figure 2
