Problem to be solved. To provide a detection method for taste that makes it possible to evaluate a taste by a method different from conventional electrochemical methods. Solution. A detection method for taste includes: mixing a sample including a taste substance X and a taste substance detection agent Y together to obtain a measurement sample; detecting light which changes owing to coexistence of the taste substance detection agent and taste substance for the measurement sample; and relating the detection with a taste of the measurement sample. The taste substance may be one kind or more selected from the group of polyphenol, amino acid, nucleotide, and xanthines.
