Solution. A method of producing a softened food product made from meat of this invention comprises: a preprocessing step of heating the meat to a predetermined temperature; a freeze-drying step of freeze-drying the heated meat; a pulverizing step of pulverizing the freeze-dried meat; an impregnation step of impregnating at least part of particle bodies consisting of the pulverized meat with a treatment solution including enzymes that decompose a specified substrate in the meat; and a heating step of heating the particle bodies impregnated with the treatment solution to an enzyme-activating temperature.
