A bread cutting apparatus comprises apertured surface 18 for supporting the bread 15, a means 24 for biasing the bread towards the surface during cutting, a water jet cutter 20 disposed on a first side of the bread, and a collection drain 23 disposed at a second side of the bread opposite to the first side to collect and divert water from the nozzle away from the bread after cutting. The cutter comprises a cutting nozzle 21 with an orifice size less than 2mm in diameter. The surface may convey the bread at a speed of 1 to 8 m/minute.
