The subject of the present invention is the provision, by means of a relatively simple method, of an animal protein which tastes good and has no undesirable flavour. The present invention has been achieved by mixing an animal protein-containing solution with 0.5-15 weight% of ethanol relative to the animal protein, and heat sterilizing same, thereby discovering that the undesirable flavour originating from animal protein has been removed and a good flavour can be obtained.
