Mixing dessicated coconut and water, and heating; beating the heated dessicated coconut, homogenising the obtained coconut paste, adjusting the pH level, and sterilising to obtain a dessicated coconut suspension; adding a culture solution of the Yarrowia lipolytica to the cooled dessicated coconut suspension and fermenting; sterilising the obtained fermentation broth, spray drying, and pulverising to obtain the low-sugar low-fat dessicated coconut nutritional powder.
