Disclosed are polypeptides having an amylase activity, polynucleotides encoding the polypeptides, and methods for making and using these polynucleotides and polypeptides. In one aspect, the polypeptides can be used as amylases, for example, α amylases, to catalyse the hydrolysis of starch into sugars. Use of the amylases in starch conversion processes, can include production of high fructose corn syrup, ethanol, dextrose and dextrose syrups. In addition, delayed release compositions are provided comprising a desired ingredient coated by a latex polymer coating.
