Methods for the boning of loin and rack portions of an animal carcass using the same equipment are described. The equipment includes: a guide defining a centre line, ≥1 dorsal assembly with a vertical dorsal blade positioned in line with the centre line; ≥1 lateral assembly with a lateral blade whose position relative the the guide is controlled by an actuator; and ≥1 chine assembly with an upper and lower blade.
