An enzyme composition comprising a pullulanase, an α-amylase and a maltogenic α-amylase and/or a β-amylase and the use of these enzymes in brewing are described. A method of mashing using the enzymes is described which includes providing a grist comprising malt and an adjunct, and contacting the grist with a pullulanase, an α-amylase and/or a β-amylase to make a wort.
