Low protein natural nut essential oils, methods of preparing them and methods of preparing nut flavoured food products, including breakfast cereals, using the nut oils are described. The non-allergenic natural nut essential oils are derived from natural nut materials having ≤100 ppb protein, e.g. nut butters, by steam distillation or solvent extraction. The essential nut oils are preferably dissolved in a liquid edible carrier for use as nut flavour ingredients in food products. The food products flavoured with the low protein essential nut oils are hypoallergenic.
