Disclosed is a barley syrup production method, which comprises a decomposition step of decomposing a barley or a milled product thereof at a temp. of 20-80°C in the presence of α-amylase. The method enables the production of a barley syrup having a sufficiently low viscosity. Also disclosed is a barley syrup production method, which comprises a decomposition step of decomposing a barley or a milled product thereof at a temp. of 45-80°C in the presence of α-amylase. The method enables the production of a barley syrup having a sufficiently low viscosity and rich in β-glucan.
