A process for the production of a flour enriched with cereal germ is described. The method consists of separating the germ oil from the cereal germ before being used to enrich type 0, 00, 1, 2 and wholemeal cereal flours, so as to obtain a germ oil enriched flour. The separation of the germ oil from the cereal germ consists of pressing the cereal germ to give the germ oil and a de-oiled germ residue which is then milled to give germ flour. The germ flour is mixed with the germ oil enriched flour and with the flour obtained from milling the cereals, to give the cereal germ enriched flour. The cereal germ enriched flour can then be used in the manufacture of enriched products.
