An anti-blooming composition consisting of C16 and C18 fatty acid monoglycerides is described. Fatty acids are present in the monoglyceride anti-blooming composition at a wt. ratio (C16 to C18) of 30:70 or larger. A laurin fat and laurin fat chocolate containing the anti-blooming composition is also described. [From En summ.
