The food flows through a pipe and is exposed to a current flowing across a‰¥2 electrodes spaced along the pipe. a‰¥1 electrode is a platinum-coated cylinder located in an enlarged part of the pipe; this ensures current flow to the electrode only over a smooth surface area, within the edges of exposed electrode surface, which minimizes fouling of the electrode and maximizes permissible current from the electrode.
