The installation is in the form of a tunnel provided with transverse rows of pressing elements in the ceiling, whilst the floor is comprised of a conveyor. Moulds with the curd are placed on special transverse carrier plates on which they are successively moved into the press and located in the correct positions underneath the rows of pressing elements. When the 1st carrier plate reaches the rear end of the press, all the pressing elements are actuated and the pressing operation then proceeds to the extent required. When the pressing is completed, the loading operation with moulds of curd starts again, the pressed cheese being concurrently unloaded at the rear end. The carrier plates, preferably with the empty moulds, are returned to the front of the installation by the conveyor.
